This highly anticipated opening marks Milos’ second Florida location and twelfth worldwide. Led by chef Costas Spiliadis, the restaurant will be located within One Flagler, a state-of-the-art office tower in the Flagler waterfront district.

Founded in Montreal in 1979, Estiatorio Milos has become a global leader in fine Greek dining. The restaurant is widely recognized for its commitment to fresh ingredients and the Greek tradition of philoxenia, which embodies warm hospitality.

At the heart of Estiatorio Milos is its renowned fish market, where guests can choose from a wide selection of fresh seafood. A dedicated captain guides diners through whole fish, shellfish, and live crustaceans, which are then expertly prepared as sashimi, grilled, or baked in sea salt.
Signature dishes include:
- Tuna tartare drizzled with exclusive Milos olive oil
- Milos special – a medley of zucchini, eggplant, saganaki cheese, and tzatziki
- Authentic Greek yogurt with walnuts and thyme-infused honey from Kythira
Wine, Ambiance, and Design
The restaurant’s curated wine selection highlights Greek varietals such as Assyrtiko, Xinomavro, and Agiorgitiko, sourced from Santorini and the Peloponnese. These wines pair beautifully with the seafood-forward menu.
Designed by Tara Bernerd & Partners, the 294-seat space incorporates Greek-inspired elements such as Pentelikon marble, oak planks, and textured stone. Meanwhile, the outdoor terrace, featuring olive trees and tranquil water features, enhances the Mediterranean ambiance.
