A Taste of Greece: Estiatorio Milos Set to Make Waves in West Palm Beach

Estiatorio Milos, the internationally acclaimed Greek dining destination, will debut in West Palm Beach on February 6. Known for its authentic Greek cuisine and luxurious atmosphere, Milos promises to bring the vibrant flavors of the Mediterranean to South Florida, featuring the freshest seafood flown in daily from Greece.

This marks the brand’s second Florida location and twelfth globally, led by legendary chef and restaurateur Costas Spiliadis. Located within the prestigious One Flagler, a state-of-the-art office tower in the Flagler waterfront district, the two-floor restaurant will offer a sophisticated blend of Greek hospitality, contemporary design, and culinary excellence.

Founded in Montreal in 1979, estiatorio Milos is synonymous with fine Greek dining. It has earned international recognition for its dedication to fresh, high-quality ingredients. The new West Palm Beach location continues this tradition, inviting guests to enjoy family-style dishes rooted in the Greek spirit of philoxenia or warm hospitality.

“I’m thrilled to bring estiatorio Milos to West Palm Beach, a community that reflects the charm and elegance of our brand,” said chef Spiliadis. “Nearly 45 years after our first opening, this feels like a natural progression of our journey. We’ve always aimed to create a place where people feel at home, enjoying authentic Greek flavors in a welcoming setting.”

The renowned fish market is central to the Milos experience, where guests can select from an impressive array of whole fish, shellfish, and live crustaceans, guided by a dedicated captain. Each selection is expertly prepared as sashimi, grilled, or baked in sea salt. Signature dishes, including the tuna tartare made with Milos’ exclusive olive oil and the Milos unique—a medley of zucchini, eggplant, saganaki cheese, and tzatziki—showcase the artistry of the restaurant. Desserts like authentic Greek yogurt with walnuts and thyme-infused honey from Kythira offer a delightful finish.

The restaurant’s wine program highlights Indigenous Greek varietals like Assyrtiko, Xinomavro, and Agiorgitiko, sourced from regions such as Santorini and the Peloponnese. These wines are a perfect complement to the menu.

Designed by Tara Bernerd & Partners, the 294-seat space exudes modern elegance. The interiors incorporate Greek elements like Pentelikon marble, oak planks, and textured stone. At the same time, an outdoor terrace features olive trees and tranquil water features. A dramatic reinterpretation of Milos’ signature staircase and custom artwork by Evridiki Spiliadis further enhance the ambiance.
